It depends on the dog and whether it’s a working dog.
Livestock Guardian Dogs (Great Pyrenees, Maremma, Kuvasz, Anatolian Shepherd) have been bred to live with their flocks. They have low prey drives and bond with the flock as their "pack". They are not pets – they are working dogs. They tend to be more independent in nature, because they were bred to work on their own without immediate human supervision. These breeds are in the Working group in the AKC.
Livestock Guard Dogs without the proper instincts and training should not be left unattended with livestock – pet dogs stay with their owners.
Herding Dogs (Border Collie, German Shepherd, Collie, Old English Sheepdog) were bred to move flocks from place to place, so they do NOT live with the flock (they would exhaust the flock by constantly trying to keep them organized). Herding dogs are generally very smart and very trainable, because they have been bred to work with the shepherd and obey the shepherd’s instructions. They are in the Herding group in the AKC.
It depends on the breed. Some of the herding breeds, like Australian shepherds, border collies, blue heelers, Corgis and such generally go home with their masters. Others, guardian breeds like Great Pyrenees, Anatolian Shepherd, Komondor, Kuvasz, and Tibetan mastiffs stay with the sheep 24/7. But a lot of sheepherders and goatherders I know use Great Pyr’s or Anatolian Shepherds with their flocks.
What kind of sheep dog? a herding dog wouldn’t but, a guardian dog would.
A herding dog does NOT stay with the sheep, he stays with the handler. No herding dog is allowed to stay with the sheep because the dog will work on his own and may hurt the sheep. Also a dog left on his own will work by himself and then will be less willing to work for a person rather than working on their own. These are dogs like border collies, australian shepherds, etc.
A livestock guardian dog on the other hand, does stay with the sheep. LGD’s are not herding dogs, they are guardians of the flock and protect them from predation. These are dogs like Great Pyrnees, Anatolian Shepherds, and Marremas. They don’t have herding instincts and they don’t ‘work’ the sheep, they merely stay with them and drive off or kill predators.
